Random Musings.....

Hey, all!
It was 103 degrees when I drove home at 5:00 this afternoon. WHAT is up with that??! In the spirit of summer still languishing, I made a salad for dinner that I thought I would share with you. I guess that is what happens when you start a blog. Everything you do, you think, "Hey! This would be fun to share. I wonder if anyone else would enjoy this?" Hence the salad. Really. It is fabulous and very easy to do.


Summer Salad
 Grill steak or chicken. I used Top Sirloin-it was on sale. Otherwise, I'll get the really thin cut of steak and it takes about two minutes to grill or do in a pan.


Gather together:


Broccoli Slaw
Bag 'o lettuce
Peanuts
Bag 'o sugar snap peas
Shelled edamame
A carton of pre-sliced mango
Red bell pepper
Newman's Low fat Sesame Ginger Salad Dressing


Ready?


Put the salad and boccoli slaw in the bowl.
Chop up the snap peas, mango and red pepper into small chunks.
Toss in a handful of peanuts and edamame.
Toss all together.


TA DA!!


Serve salad in a bowl. Add dressing (I don't do this in the big bowl-everyone in my family has a different dressing preference.) Lay strips of the BBQ'd meat on top and enjoy!

  1. Yum! I always love to find a new recipe! This looks great, almost has an asian inspired feel to it.
    And her Halloween swap is so great! Looks like yours is gonna be too cute! Can't wait to see more.

  2. Oh yumm!! Can you come over and bring that here!! It's a little cooler.. may be by 10 degrees or so.. :) This heat is making me too tired to cook..

    Your mom for your shower (I think) made a cake in a flower pot. Can you recreate that.. I have never made one!!

  3. Ok.. I have been trying to rack my memory bank..
    There were flower pots involved and crushed oreo cookies to resemble dirt.. and maybe ice cream.(?) I thought it was a cake but I could be wrong. Were there gummy worms.. hmmm. It definitely had a floral theme.. and it definitely WAS your mom! :)
