Why I Love Summer, Part 2


The Barbeque.
Are you with me?
It seems to be a manly pursuit.

In our home, it's MY favorite way to cook in the Summer.
Doug doesn't cook much, which is not a problem. It just means I get to use the barbeque all the time.
I love my Barbeque.
It looks a lot like this:


I had a picture of it, but it got deleted. It's 9p.m., so I don't think I will go outside and take another picture of it, no matter how much I like it.

I rarely cook inside in the summer. It's just me and my BBQ.
I do not wear weird aprons.




But I will take my book outside and read while the meat is grilling. 
Or maybe I will water a little.
Last night I tweaked yet another Cooking Light recipe, using what ever I had on hand. 
It was good.
Really good!
Here is the original recipe.
Here's mine:



In a bowl, cut up zucchini (yes, that I actually grew!!), a small white onion, throw in some grape tomatoes (yes, I grew these as well!!). Add 4 tsp. minced garlic,1 healthy tsp. of dried oregano, 1 tbsp. white wine vinegar, drizzle some olive oil and add some salt and pepper. Toss well.




Season a piece of chicken with some salt and garlic salt. Put all your veggies into a BBQ basket (LOVE this basket-I think I got it at Wal-Mart) and throw the chicken on the grill as well.




Cook the chicken about 6 minutes per side and stir the veggies every once in a while.




While this is cooking, cook about 1/2 bag of pasta. When the pasta is finished, drain in a collander. Put a couple of handfuls of spinach on it while it is hot, then you can wilt your spinach easily.





When your chicken and veggies are done, put the spinach/pasta mix in a bowl and add a drizzle of olive oil and 3 tbs. parmesean cheese. Add the veggies and cut up the chicken and toss it all together.
Add feta cheese if you like.
Lauren and I like, Brenna and Doug do not like.




The mix on the veggies is killer. Then you add in the chicken. Yum! But the feta cheese crumbles is what put me absolutely in love. A bite with zucchini, onion, tomato and feta is the BEST!




Ahhh, I love Summer!

  1. me too!! Our new kick on the barbie is grilled white peaches. YUM. Wedges of peaches tossed with a little olive oil and balsamic vinegar (killer on fruit)and grill till nicely warm and some stiprs. Oh man...de-lish. Tonight was grilled salmon (not your favorite), fresh Lebanese cukes (farmer's market bought), the peaches and some steamed carrots. Yum-O!

  3. That looks wonderful.. I Love to cook on our grill. It doesn't heat the house up! and it's so nice to be outside.. But latley it has been way to hot.. But I still cook outside even when its hot!

  4. oh man - yummy! this looks & sounds amazing! i bet it would be great with halibut or king crab too...i think you should come out to the lodge and cook with me! the only difference would be when i grill out there i either have to wear rain gear, or a bug net, or both. i have spares you could borrow :)

  5. We would LOVE this around here, and I have every bit of it except the feta on hand just about all of the time. We grew the tomatoes and squash,and right now they're both coming out of our ears. The man just got a veggie basket for Father's Day. We haven't tried it out yet. This looks like a perfect Saturday night dinner for this week.

    And I think you should buy and wear that flaming apron. Hot stuff you know...

    Looks wonderful! Just and I just started the South Beach diet and we are living on lean meat and fresh vegetables right now...which isn't a bad way to live at all! This looks something like what we had last night and it was soooo good! I wish I could take the pretty picture of it, though! Soon will dye my hair blonde and look like you...teehee!

  7. We use our grill all year 'round. Things taste so much better on the grill, don't they?!!? When I was pregnant with my oldest son I craved Oscar Mayer Weiners and they HAD TO be cooked on the grill. I was out in my robe in the middle of winter on more than several occasions cooking those weiners!! What a sight I must've been!!! HA HA!!!!!! :)

  10. Wow Lynn, This sounds wonderful! I grill a lot in the summer too. The only thing hubby grills is steak and he does that on our charcoal grill. All the other cooking is done on our gas grill. I think I might have to add in one more savory ingredient to this dish...some crumbled bacon!!!
    I think we're going to make this! I'll let you know how it comes out!
